1 apple shredded (about 1/4 c.)
2 carrots shredded (about 3/4 c.)
1/2 c. milk
1/2 c. water
3 T. oil
3 T. applesauce
3 eggs
1/8 t. nutmeg
1/8 t. ginger
1/2 t. all-spice
1 t. cinnamon
2 t. baking soda
1/4 c. honey
1/4 c. coconut flour
1/4 c. ground flax seed
1 1/2 c. oats
Mix wet ingredients with dry ingredients. Batter should be thick.
Spoon into muffin cups. Bake for 18 min. at 400 degrees until toothpick comes out clean.
